Kerala Fish Stew

I was looking through books and blogs to find a simple, authentic fish moilee recipe, and then I stumbled on this one! Recipe from http://www.cookingandme.com/2011/05/kerala-fish-stew-meen-molee-recipe.html


Ingredients

4-5 pieces tilapia fillets, cut and seasoned with red chilli powder nd turmeric
2 medium onion, chopped
2-3 green chillies
Coconut milk, 3-4 cups (I used two and added two cups fat free milk)
1" piece ginger chopped fine
1 tsp red chilli pwdr
1/4 tsp turmeric
1 tsp pepper pwdr
1 small piece cinnamon
5 cloves
1/2 tbsp Maida
3 sprigs of curry leaves
Salt
Lemon juice

In oil, add the onions and let sweat till they Turn pink. Add the turmeric and red chilli powder, pepper powder, and curry leaves. Fry for 2 mins, then add the Coconut milk, green chillies, ginger, cloves, cinnamon. Allow the ingredients to simmer together for a little bit. Add the fish pieces, and cook on a low flame till cooked completely. Add lemon juice as desired.

When does the maida go in? Do you use normal coconut milk or the powdered kind?
